This rye whiskey recipe will make a 25L wash
Ingredients:
- 1kg pale malt (distillers malt)
- 3.5kg Rye malt
- 22L water
- 20g whiskey yeast
Directions:
- Heat water to 73.2 degrees celcius and then mix in malt barley, malted rye and flaked rye. Keep mixture at 73.2 degrees stirring constantly for 1.5-2 hours to convert starch into fermentable sugar and dextrin
- Fliter off liquid and place into a fermentation device and allow to cool to 30 degrees C. Immedietly pitch 20g of whiskey yeast. Stir liquid for 1 minute then cover and seal with an airlock.
- The mash will take 5-7 days to ferment. After fermentaion is complete pour into the still, filtering it through a pillow case or strainer and cheesecloth to remove all solids
- Distill rye whiskey at no more than 80% ABV. Distilleries will usually do a stripping run then spirit run to produce a quality rye whskey. After distillation rye whiskey distilleries will dillute to 63% and put in new whiskey barrels for 3 years. An alternative to whiskey barrels can be oak blocks or liquid oak for the hobbyist.
